However, the undoubted king of the Dubai culinary landscape is Middle Eastern cuisine. With countries from all over the region, including its own traditional Emirati, the flavors blend together creating a culinary hybrid that has become synonymous with the city.

Begin your discovery in the Old Quarter of Al Bastakiya, where you will visit the region's only Coffee Museum for an interesting insight into regional and global coffee history. A cup of Gahwa, Arabic coffee kickstarts your tour. This traditional end to any Middle Eastern meal is coffee accompanied with dates, usually served without milk and in tiny cups. It can be flavored with a range of spices from saffron to cardamom.

Stop next at a traditional cafe, and sit and relax in the calm space that contrasts with the busy street setting. Try a Lebanese breakfast favorite, a cheese or zaatar manakesh. Originally a simple, doughy flatbread, the manakesh has now evolved into a pizza-like creation, often topped with cheese and spiced minced beef or lamb.

Continue strolling past Al Fahidi Fort into the bustling Souk Al Kabeer where a brisk trade in garments, spices and more is afoot. Stop briefly for delightfully refreshing lemon-mint juice before discovering a creek-side hidden gem.

Dig into a shared platter of Arabic Mezzeh while you watch Abra boats tirelessly cross Dubai Creek. Later take this traditional wooden craft across the creek to Deira. A pleasant stroll brings you to a popular creek-side restaurant for a taste of Shawarma and Falafel, the most ubiquitous of Arab street foods. Shawarma can be prepared with tender strips of chicken or meat flavored with a heady mix of spices, cooked on a rotating spit and then crammed into flatbreads full of crunchy lettuce, hot sauce and yogurt, it's easy to see why this is one of Dubai's most popular dishes. Falafel is another classic that can be found on the menu of pretty much any Middle Eastern restaurant, falafel is a fried ball made from ground chickpeas or fava beans and spices and is the perfect street food.

Your final stop is at a renowned Emirati restaurant where the subtle flavors of the Orient will seduce you and where the delicate fragrances will stay with you long after the meal. No Middle Eastern journey is truly complete without exploring the Emirati cuisine.

Special Instructions
We recommend wearing weather appropriate clothing and comfortable walking shoes. Please wear warmer clothing during winter months, as it can get cold. Men and women should ensure shoulders and knees are covered when in public, especially in souks, shops, malls, and villages. The United Arab Emirates has conservative dress traditions during the month of Ramadan. If you are traveling during Ramadan, swimwear must be confined to the beach and hotel pools.
 
Restrictions
Guests must be able to get in and out of the transportation. This tour is not wheelchair accessible. Normal tourist photography is acceptable, but it is considered offensive to photograph Arab women. It is also courteous to ask permission before photographing men. Photographs of government buildings, police, or military installations are not allowed.

Mr. Miller is the former Executive Vice President and Chief Development Officer for Abercrombie & Kent, the World's leading luxury travel company. In that role, Mr. Miller was responsible for contributing to Abercrombie & Kent's international growth through the development and acquisition of tour products and travel experiences around the world with a specific focus on cruising and land based experiences. Prior to joining Abercrombie & Kent, Mr. Miller held a variety of executive positions with Royal Caribbean International and Celebrity Cruises for more than a decade. These positions included Vice President of Guest Sales & Service, Vice President of Brand Development, and Vice President of Onboard Revenue (which included shore excursions). Mr. Miller also led Celebrity Expeditions, a collection of outstanding and unique tours around the World.

Michael Bonner
Mr. Bonner has over a decade of experience working in the cruise industry in a variety of roles for both Royal Caribbean Cruises Ltd. and Viking River Cruises. Most recently, Mr. Bonner was the Chief Operating Officer for The Scholar Ship, a Royal Caribbean program aimed at providing college students onboard educational programs in conjunction with enriching shore excursions around the world. Mr. Bonner also helped co-manage Viking River Cruises U.S. Operations, and he ran the corporate, strategic, and deployment planning functions at Royal Caribbean. While at Royal Caribbean, Mr. Bonner was responsible for forming Royal Celebrity Tours, Royal Caribbean's land-based tour operation in Alaska, which takes cruise passengers on multiple day tours through the interior of Alaska either before or after their cruises. Prior to working at Royal Caribbean, Mr. Bonner was a consultant for Booz Allen & Hamilton.
